Ingredients :
For Saran :
1) 1/2 kg dried crush coconut
2) 250-gram semolina roasted
3) Grind sugar sweet to taste (approximately 1 cup)
4) 2 inch dry ginger, 2-5 cardamom powder mixed together in
mixer
5) 1/2 cup Charoli, 1/2 cup raisins
For Karanji :
1) 1 kg flour
2) 1 cup ghee
3) 1 cup milk and 1/2 cup water
Recipe :
1) Collect the material for the Saran and keep it for 24
hours
2) Heat ghee, combine milk and water and heat
3) In a bowl, add ghee first and then add milk and knead the
dough, cover for 25 minutes. Once again, add water and knead the dough.
4) make 2-inch small roti for karanji, add saran and cut
with karanji spoon
5) Heat the oil in a pan and fry karanji till it turns
golden brown on medium heat
Note :
1) Don't add too much sugar in the saran already, as the
saran can be sweeter after the soak, so if the saran becomes less sweet, you
can add the sugar later.
2) Heat ghee separately, do not mix in milk and water.
3) Only flour can be done by adding water to the flour, but
if you want Karanji crispy, using milk in it is very important.
